When Brownies Are Undercooked?
In my series of brownie questions, one of the top questions was, “When Brownies Are Undercooked?”.
Undercooked brownies can be disappointing, if that’s not what you’re going for. But if they’re too under-baked, here’s what to do:
How to Tell If Brownies Are Under-baked
The center is wet or jiggles when you move the pan.
A toothpick test comes out with raw batter (a few moist crumbs are fine).
The edges are done, but the middle looks sunken and glossy.
How to Fix Them
Pop them back in the oven: If they’re still in the pan and mostly raw, bake them for another 5-10 minutes (depending on how under-baked they appear) at the same temperature. Repeat every in 5 minute increments until your toothpick no longer comes out coated in batter.
Let them cool completely: Sometimes, brownies firm up as they cool. Give them at least 30 minutes to an hour.
Embrace the gooeyness: You’ll likely have some fully baked pieces around the perimeter, with the most under-baked in the center. Enjoy them as a molten brownie situation with ice cream.
How to Prevent Undercooked Brownies Next Time
Bake at the right temperature for the time recommended on your recipe.
Use the toothpick test—look for moist crumbs, not wet batter.
Let them rest before slicing; brownies keep setting as they cool.
