Nachos Libre at Governors Ball

We're with Cassandra from Nachos Libre to learn how they're changing the nacho game, making everything from scratch, and unveiling a new labor of love, their Chicken and Waffles Nachos.

I can’t imagine there’s a person who doesn’t like nachos, because, what’s not to like? And, if your answer is “I don’t because I’m allergic to _____” or “I have _____ dietary restrictions”, well, that might not apply here since everything they make is customizable with options for almost all dietary preferences. It’s impressive. Not to mention, everything is made from scratch in small batches! These are most certainly not your average nachos.

Governors Ball was their first festival, and they’re starting to get out there (after a pause to launch during the pandemic), and I’m excited for the people of NYC to be able to try these nachos. I personally am vegetarian, and my videographer is vegan, and we were able to thoroughly enjoy their BBQ Jackfruit nachos, which I highly recommend. And did I mention that aside from being passionate, humble, and launching this nachos business, Cassandra is also studying for a law degree? Mic drop.
