Grind up freeze dried strawberry into a powder
Grind up shortbread cookies
Keep them separate
Combine some strawberry powder and cookies into a bowl, set aside
Make ice cream base:
100g cream cheese, cold
225g heavy whipping cream, cold 1
40g sweetened condensed milk, cold
Take a small amount and mix in some strawberry powder, put in a piping bag
Optional: put some strawberry jam in piping bag
Prep the loaf pan:
Spray with non-stick spray, and line with cling wrap
Lay down some crumbs at base
Put 1/2 the ice cream in
Pipe in the strawberry ice cream, then jam on top
Fill the rest with the ice cream
Cling wrap on top
Freeze for 4-6 hours or overnight
Use rest of crumbs to coat after removal from the pan
Slice and enjoy!
