Fool-Proof Sponge Cake

I’m very late to posting this here- after receiving a couple comments on my YouTube video asking about quantities of ingredients, I realized I didn’t have the recipe posted anywhere. Now, I don’t always post recipes. Sometimes I just want to post something to show the result for inspiration and creativity and not have to post the full recipe and instructions (which, sorry if this is annoying for you to read, but, takes time and I don’t monetize off of it, so, sometimes doing free work that doesn’t excite me just goes right out the window- it’s called boundaries, people! Haha.) Anyway! I’m going to just post the ingredients and measurements here, and you can check out the video for process and instructions! Compromise!

This is formatted for a 7”x3” pan (the video shows a larger amount of batter, but the recipe below is for a single 7”x3” pan- if you want 2 cake layers, or more, just multiply it by the number of pans you want to use).
350F for 25-35minutes (depending on your oven, check at ~25min)

Ingredients: 

  • 5 large eggs 

  • 1 tsp SP cake stabilizer/emulsifier (4 grams) 

  • granulated sugar (156 grams) 

  • less than 1/4 tsp salt 

  • a little less than 1/2 tsp baking powder 

  • cake flour (140 grams) 

  • 2.5 TBS neutral oil  

  • splash of vanilla (or you can substitute another flavor)
