Season 1 Episode 9: FIELDTRIP

In this episode, we're visiting JJ Johnson at FIELDTRIP, at Rockefeller Center in New York City, to make their Pineapple Black Fried Rice and Wok Veggies.
"Founded in 2019 by Chef JJ Johnson, FIELDTRIP is a community-based dining experience that celebrates culture through the shared experience of rice. " -FIELDTRIP

I feel like I graduated from the school of FIELDTRIP after spending time with JJ, he moves quick, and you have to keep up! It was so much fun making food with him and getting to hear the backstory and history of the dishes and the rice that we made in his restaurant. They really do take rice seriously there, and you can tell in the texture and flavor. Everything is thoughtfully prepared, seasoned to perfection, and all made accessible to guests, where all are welcome.
JJ has loads of experience and major accolades, but you don’t feel any bit of ego when you’re with him! He’s a lot of fun to be a round, knows his food, and really cares about what he’s doing (jumping in and fulfilling delivery orders and taking guest’s orders at the counter while we were there). I had the Salmon Bowl with the Pineapple Black Fried Rice, and it was so delicious and flavorful. I’m not huge on pineapples (don’t come for me), but it really worked wonderfully in this dish and I finished every bite.
