Why Cake Pops Crack? Cracking The Code

In my series of cake questions, another one of the top questions was, “Why Cake Pops Crack?”.

Cake pops can crack for several reasons, including:

  1. Dry Cake: If the cake used for the cake pops is too dry, it can crack when the stick is inserted. Make sure the cake is moist enough by adding enough frosting help hold it together.

  2. Thick Coating: If the candy coating used to dip the cake pops is too thick, it can create tension on the cake pop as it sets, leading to cracks.

  3. Cold Cake: If the cake is too cold when the stick is inserted, it can cause the cake to contract and crack. Allow the cake to come to room temperature before assembling the cake pops.

  4. Improper Rolling: If the cake mixture is not rolled into balls evenly or if air bubbles are trapped inside, it can cause cracks when the cake pops are dipped.

  5. Excessive Handling: Handling the cake pops too much or tapping them too hard to remove excess coating can create stress on the cake pop and cause cracks. Try to handle them gently.

To prevent cracks, make sure to use moist cake, a thin coating, and handle the cake pops gently during assembly and dipping.
