Pignoli Cookies

Pignoli cookies, this is the result when you have lots of left over pine nuts from pesto, and, so, cookies. This recipe is super simple and you don't even need a mixer, you can literally mix the dough all by hand! Click the photo for the video with the steps!

Pre-heat oven to 300F in a bowl mix together:
1/2 cup all purpose flour 1/2 cup confectioner sugar 1/2 cup granulated sugar 1/4 teaspoon salt then add in:
7oz tube of almond paste (breaking up in small pieces helps)
1 TBS orange zest
1 egg white

Roll the dough into 1 TBS-2TBS sized balls (helps if you dampen your hands a little bit to prevent too much sticking).
Roll into the pine nuts.
Arrange on a sheet pan with parchment or silicone mat and bake for appx 18-22mins.
