Vegan Copycat Olive Garden Salad

This is a super easy and flexible recipe, a copycat of Olive Garden's salad, but making it vegan! Just blend all the dressing ingredients together in a food processor, or, a blender will work too. Then, prepare your salad and pour on the dressing! Click on the photo for the video with the steps!

Dressing:
¼ cup extra-virgin olive oil
3 tablespoons vegan mayonnaise (if you can't find any in the store, you can make it! Jessica in the Kitchen has a simple recipe here)
1 tablespoon white wine vinegar
1 tablespoon lemon juice
1 ½ teaspoons granulated sugar
1 teaspoon salt
¾ teaspoon black pepper
½ teaspoon Italian seasoning* (if you don't have this, see below for a simple recipe)
1 garlic clove, crushed
1 ounce vegan parmesan cheese, grated (if you can't find vegan grated parmesan, I made my own, Mexvegana has a recipe for Cotija cheese, which I find more similar to parmesan, and used that!)

Salad (all amounts below are really up to you, to taste!):
Romain or Italian Mix (or any type or amount of salad you like!)
Black olives, pitted
Pickled pepperoncini
Red onion, sliced thin
Plum tomatoes, sliced
Croutons (I made my own using leftover focaccia bread)

*Italian seasoning:
2 TBS dried basil
2 TBS dried oregano
2 TBS dried parsley
1 TBS dried rosemary
1 TBS dried thyme
1 tsp garlic powder
