When Cake Is Dry: Moisture Matters

In my series of cake questions, another one of the top questions was, “When Cake Is Dry”.

When a cake turns out dry, it can be disappointing, but there are several reasons why it might happen:

  1. Over-baking: Baking the cake for too long or at too high a temperature can cause it to dry out. It's important to follow the recipe's baking time and temperature carefully.

  2. Using Too Much Flour: Adding too much flour to the batter can absorb too much moisture and result in a dry cake. Make sure to measure your ingredients accurately.

  3. Not Enough Fat: Fat helps to keep cakes moist. If the recipe calls for butter or oil, make sure to use the correct amount.

  4. Over-mixing: Over-mixing the batter can develop too much gluten, which can result in a tough and dry cake. Mix just until the ingredients are combined.

  5. Not Enough Liquid: Not adding enough liquid to the batter can result in a dry cake. Make sure to follow the recipe's instructions for liquid ingredients.

  6. Using Old Ingredients: Using old baking powder or baking soda can affect the cake's texture. Make sure your leavening agents are fresh.

If your cake turns out dry, you can try brushing it with a simple syrup or sugar glaze while it's still warm to add moisture. You can also try serving it with a scoop of ice cream or whipped cream to add moisture and flavor.
